Serves 4 as a side
2 cups cos lettuce
2 large handfuls of rocket
一盘樱桃番茄，sliced in half
1 large carrot,finely grated or cut into thin strips
½ red capsicum,cut into thin strips
½ large cucumber,chopped into half moons
100g goats feta
Salt and pepper to taste
Juice from 1 lemon
2 tsp apple cider vinegar
3 tbsp extra virgin olive oil
Add all dressing ingredients into a small jar and shake well until combined.
Pour dressing over the salad mix and toss ingredients together.Top with crumbled goats feta and enjoy!!
